This great summer meal idea features rice with sweet plum tomatoes, highlighting the smokey flavours of Gouda cheese and turkey in a creamy garlic cilantro dressing. Celebrate summer and try this dish on its own for lunch or with dinner after a day of fun in the sun.
Ingredients
| 3 cups | cooked Tex Farm long grain white rice, cooled to room temperature | 750 mL |
| 1-1/2 cups | shredded smoked Gouda cheese | 375 mL |
| 1 cup | cubed smoked turkey breast | 250 mL |
| 2 | plum tomatoes, coarsely chopped | 2 |
| 1/4 cup | 1/2 inch (1 cm) slices red onion | 50 mL |
| 1/2 cup | creamy garlic cilantro salad dressing* | 125 mL |
| To taste | salt and pepper | to taste |
Directions
Combine rice, cheese, turkey, tomatoes, and onion in large bowl. Add salad dressing to rice mixture and toss lightly. Season to taste with salt and pepper.
*Ranch-style dressing mixed with 1 tablespoon chopped fresh cilantro may be substituted for creamy cilantro dressing.
