Santa Fe Smokin' Rice Salad

This great summer meal idea features rice with sweet plum tomatoes, highlighting the smokey flavours of Gouda cheese and turkey in a creamy garlic cilantro dressing. Celebrate summer and try this dish on its own for lunch or with dinner after a day of fun in the sun.

What You’ll Need:

Ingredients

3 cups cooked Tex Farm long grain white rice, cooled to room temperature 750 mL
1-1/2 cups shredded smoked Gouda cheese 375 mL
1 cup cubed smoked turkey breast 250 mL
2 plum tomatoes, coarsely chopped 2
1/4 cup 1/2 inch (1 cm) slices red onion 50 mL
1/2 cup creamy garlic cilantro salad dressing* 125 mL
To taste salt and pepper to taste

Directions

Combine rice, cheese, turkey, tomatoes, and onion in large bowl. Add salad dressing to rice mixture and toss lightly. Season to taste with salt and pepper.

*Ranch-style dressing mixed with 1 tablespoon chopped fresh cilantro may be substituted for creamy cilantro dressing.
