This great summer meal idea features rice with sweet plum tomatoes, highlighting the smokey flavours of Gouda cheese and turkey in a creamy garlic cilantro dressing. Celebrate summer and try this dish on its own for lunch or with dinner after a day of fun in the sun.
|3 cups||cooked Tex Farm long grain white rice, cooled to room temperature||750 mL|
|1-1/2 cups||shredded smoked Gouda cheese||375 mL|
|1 cup||cubed smoked turkey breast||250 mL|
|2||plum tomatoes, coarsely chopped||2|
|1/4 cup||1/2 inch (1 cm) slices red onion||50 mL|
|1/2 cup||creamy garlic cilantro salad dressing*||125 mL|
|To taste||salt and pepper||to taste|
Combine rice, cheese, turkey, tomatoes, and onion in large bowl. Add salad dressing to rice mixture and toss lightly. Season to taste with salt and pepper.
*Ranch-style dressing mixed with 1 tablespoon chopped fresh cilantro may be substituted for creamy cilantro dressing.
