Deliciously healthy and quick to prepare, Lemon Rice is a perfect addition to just about any meal. Try substituting a U.S. Black Japonica rice variety for visual appeal.
Ingredients
1 cup |
uncooked Tex Farm long grain white rice or Tex Farm long grain brown rice |
250 mL |
1 tsp | margarine | 5 mL |
1 | clove garlic, minced | 1 |
1 tsp | grated lemon peel | 5 mL |
Pepper to taste | ||
6 | eggs | 6 |
2 cups | chicken broth | 500 mL |
2 tbsp | chopped fresh parsley | 25 mL |
Directions
In large saucepan, combine rice, margarine, garlic, lemon peel, pepper and broth. Bring to a boil, stirring occasionally. Reduce heat; cover and simmer for 15 minutes or until rice is tender and liquid is absorbed, stir in parsley.
Makes 6 servings.
